Please don’t get me wrong, but that sauerkraut looks a bit… weird. Much too bright. Sorry, I’m from Germany.
Add some laurel, cumin and/or juniper and clove. Leave the pepper in! Then cook it twice with boullion for a couple of hours “low and slow”!

In my experience it does, after about 30 min to an hour.
Yeah, I figured as much about the flavor. What I was mainly wondering was, does the whole peppercorn soften when cooked in with the sauerkraut.
