That sounds good! I have never, ever heard of chicken marsala pizza? When, and where did you purchase this?

  • ChefTips says:

I was told by a chef years ago to add some olive oil to some butter to help increase the smoking point. I believe that the addition of the oil helps prolong the burning of the butter solids. This sounds like something Alton Brown should investigate….ha ha.

Please post a recipe for chicken marsala pizza, I paid $7.00 for a slice once and never want to eat another regular slice of pizza again!

Really like your videos. Very well done!

I read in a cookbook that mixing butter with an oil (that has a higher smoking point) will not make a difference. The butter will burn at its smoking point and the oil will burn at the higher smoking point.

It further went to say that the only way to raise the smoking point of butter was to clarify the butter, which contradicts what your video states.

    Can you confirm?
BTW-I hope you’re right. The last thing I want to do is clarify butter.
